In preparation for Agua Dulce's Seven-Night, Seven-Country, Dining and Music Tour, August 1 - August 7, 2010, I recently joined Exec. Chef Ulrich Sterling in his very busy kitchen. Ulrich, from Beaufort, South Carolina, has been in the restaurant business for twelve years and in New York for nine. Ulrich has worked at Pipi, a tapas restaurant, the MOMA Cafes, Sushi Samba Park, and Sushi Samba 7. In 2006 he joined the James Beard Foundation, where America's culinary heritage is celebrated and preserved. Prior to Agua Dulce, lucky Ulrich was Chef at the Turks & Caicos Sporting Club in Ambergris Cay in the Caribbean.

In this afternoon's kitchen, while the evening staff shared an early "family dinner", Chef Ulrich prepared Thai Chili and Smoked Peach Purée. The kitchen staff prepared Chayote for dinner and peeled poblano peppers. Under kitchen lights, a late lunch was kept warm, including Cubano Sandwiches and Fish Tacos. On a large platter, Fish Tacos, a Cubano Sandwich, Grilled Organic Chicken with Bacon, and “Chorizo Tres Quesos” would be served upstairs for an early dinner too.

I asked Chef Ulrich, also an accomplished photographer, to send a few of his favorite photos, and below you can see Escolar with Pickled Watermelon, Octopus Galician Style, Spanish Mackeral Tiradito, and a Wahoo Fish, that he caught on a fishing expedition in Turks and Caicos. The Anniversary culinary - music - dance tour includes seven countries: Mexico, Argentina, Caribbean, Peru, Colombia, Brazil, and Cuba. The ambiance at Agua Dulce is lively, joyful, and welcoming.
